Wher the liver balls are done, put them into the casserole with the fat in which the liver was cooked. Rub smooth 1 1-2 tablespoonfuls of flour in little water and stir into the corsetns of the casserole a 9 a with 2 cupfuls of hot water. Lastly, add a quart of boiled green peas and simmer al! io- gether for about ien minutes. Serve. This may seem rather an elab- orate recipe, but the dish is excellent when properly cooked. Coffee Cake It may be called either bread or cake, yet it is reither—exactly. Under any name it is delicious. Beat to a cream an even cup of suger with a gencrous half cupful of lard and butter in equal parts. Stir in 1 well-beaten egg; add 2 of milk that been boiled and cooled and a cake of compressed yeast dissolved in half a cupful of warm water. Add 5 cupfuls of flour sifted twice with a scant teaspoonful of salt. Beat all into a _ smooth, dough. Let rise overnight, mixing this “‘sponge’’ before bedtime. In the morning beat it hard for two minutes. Grease deep jelly-cake tins or pieplates; spread the batter evenly in them and let them rise until very light. Then spread with melted butter and strew the surface with 2 mixture of 3 tablespoonfuls of flour creamed with bit of butter the size of an egg.
